This recipe is written to fry both chicken and mushrooms to go with your waffles. I think the mushrooms are that good and deserve to be in the mix, and I would use them over a processed plant-based chicken substitute any day. To go strictly vegetarian, double the amount of mushrooms to 2 pounds.
